Infusion of honey on rose petals

There is nothing to compare the aroma of a rose bush in the early morning hours, when the dew has just disappeared and the smell of flowering is the richest. You deeply inhale the rose spirit and calm down, you involuntarily smile and understand - I wish I could save this aroma for the winter, like a precious gift of summer…
The entire Rosaceae family has relaxing and calming properties, strengthens the heart muscle, and relieves inflammation. You can harvest and dry rose buds for tea or jam, or you can infuse honey on rose petals just taken from the bush.
Some tips on how to collect rose petals
- Choose bushes that grow away from roads.
- You cannot use roses from flower shops (let me remind you just in case).
- Try to harvest early in the morning, as soon as the dew has dried - then the concentration of beneficial enzymes is highest, as well as essential oils.
- The most fragrant are the recently opened buds.
- You can collect only the petals, leaving the stem and core on the bush.
- Do not pick more than one third of the buds from one bush - the bees need to eat and pollinate the bushes so that next year we can reap an even richer harvest.
How to prepare rose petals
- For rose honey we only need petals.
- Look through them, remove aphids and bugs.
- Spread on a clean towel and let “rest” for several hours.
- In the recommendations I found, no one washes the petals, so the decision on this issue is up to you. The main thing is to dry it well if you decide to rinse the rose.
How to make pink honey
- Place the petals in a jar with a screw-on lid, washed with boiling water, lightly tamping.
- Fill no more than 3/4 full.
- Heat good, natural light honey in a water bath.
- You should not use last year’s candied honey, buckwheat, or coriander. It is advisable to take honey with a less pronounced taste.
- Pour well-warm honey into the jar with petals, stir to remove air pockets.
- Pour boiling water over the lid and close the jar tightly. Periodically turn the jar over and shake. Honey should be matured and stored in a dark place.
- After 6 weeks, the honey can (but not necessarily) be strained: place the jar in a pan of hot water, strain the honey through a sieve into a sterilized jar.
How to use rose infused honey
- As a mask for dry, irritated, aging, chapped skin.
- Sweeten warm tea with rose honey.
- Pour it over the ice cream.
- Spread it on toast.
- Just savor a spoonful to calm anxiety and disperse depression.
- Serve with pancakes and pancakes, apples.
- Add to pastry creams.
- If you have dried roses, you can also make honey with them. Fill the jar 1/2 full, the roses will swell and fill the jar.
